With 24 years in the industry, Chef Bajonero started with Bob’s as a Sous Chef 12 years ago, then served as the Chef for Bob’s Grapevine for over eight years. Chef Bajonero studied in London, later opening his own continental-style restaurant in 1995. Chef Bajonero and his culinary team are the heart of Bob’s Steak & Chop House, with Chef Bajonero directly supervising every dish that comes out of the kitchen.
This Bob’s Steak & Chop House restaurant is located within the Omni Louisville Hotel. Paying homage to some of Louisville’s greatest treasures, the restaurant decor celebrates the rich history and tradition of American thoroughbred racing, Muhammad Ali, and the Kentucky bourbon industry. Alberto first joined Bob’s Steak & Chop House in 2002 where he started in the kitchen learning how to work in every position until eventually working his way up and being promoted to Executive Chef in 2022. His invaluable work-ethic, leadership, and dedication have all been a major part of the restaurant’s long running success.
